McLeod Family Fool-Proof Fudge
 

2 cups sugar
1 stick butter
3 cups of chocolate/peanut butter chip
1 can of sweetened condensed milk

Directions
Place all ingredients in a large bowl. Put in the microwave for about 3 minutes - stirring at least once. When everything has melted and is very warm, pour into a greased glass pan and refrigerated for several hours. The best fudge that you have ever put in your mouth ... I guarantee it!!

 

 

 
Linda's Family St. Patrick's Day Celebration
 
 

After a bizarre Valentine dinner, my family loves to see if I can meet a St. Patrick's Day challenge. I don't tell them that this is so much easier, and that green foods are healthier! "Why spoil a good thing?"

Green Eggs and Ham
(a must for Breakfast!)

Spinach Quiche

Green Salad with pleanty of green veggies (ie green peppers, peas, celery, broccoli)

Green Goddess salad dressing

Lime Jello with fruit (Fact: Lime is the most popular jello and Utah consumes the most!)

Pistachio icecream on Brownies

Mint Iced Tea

Use green table cloth, plates, napkins. Wear Green! Have fun! Laugh lots! "Itís not easy being green!" Enjoy and love your family!

 

 

 
Sarah's Luscious Chocolate Truffles
 

Use green sprinkles for St. Patrick's Day! Top with your choice of toppings like colored sugar, or chocolate sprinkles!

3 cups of semi-sweet chocolate chips
1 (14 ounce) can sweetened condensed milk
1 tablespoon vanilla extract

Directions
In a large saucepan, melt chocolate chips with sweetened condensed milk. Remove from heat and stir in vanilla. Transfer the mixture into a medium bowl. Cover and chill 2-3 hours or until firm.

Shape mixture into 1 inch balls; roll in desired covering and/or decorate them. Refrigerate in a tightly covered dish.

 

 

 
Melissa's Double Chocolate Snack Cake
 

1 2/3 cups flour
1 cup brown sugar
1/4 cup cocoa powder
1 tsp. baking soda
1/4 tsp. salt
1 cup water
1/3 cup vegetable oil
1 tsp. white vinegar
3/4 tsp. vanilla
1/2 cup chocolate chips

Directions
Grease and flour 8" X 8" pan. Combine flour, sugar, cocoa powder, baking soda and salt. Add water, oil, vinegar and vanilla, beat until smooth. Pour into pan, sprinkle chocolate chips over top. Bake at 350 degrees for 35-40 min.

This is a great recipe because I always have the ingredients on hand and can whip one up. It's a great size and I make it a lot when I send dinner to someone. It's also chocolate which everyone loves but not too gooey!! Enjoy!!

 

 

 
Julie's Mac 'n Cheese Soup
 

This is major comfort food! My kids devoured it!

1 package (14 oz) deluxe macaroni and cheese dinner
9 cups water, divided
1 C fresh broccoli florets
2T finely chopped onion
1 can condensed cheddar cheese soup, undiluted
2 1/2 C milk
1 C chopped ham, fully cooked

Directions
Set aside cheese sauce packet from macaroni and cheese dinner. In a large saucepan, bring 8 cups water to a boil. Add macaroni; cook for 8-10 minutes or until tender.

Meanwhile, in another large saucepan, bring remaining water to a boil. Add broccoli, and onion; cook for 3 minutes. Stir in soup, milk, ham and contents of cheese sauce packet; heat through. Drain macaroni; stir into soup.

Yield: 8 servings

 

 

 
Alane's Fresh Salsa
 

Finely dice the following:
6 roma tomatoes
2 garlic cloves
1 onion
1 jalapeno pepper, fresh
1 red pepper
1 green pepper
1 yellow pepper

Toss with:
1/2 bag white "shoepeg" corn juice of 1 lime
2 T. olive oil

Directions
Season to taste with salt, pepper, ground red pepper

Refrigerate for at least one hour before serving to blend flavors. Serve with tortilla chips and enjoy!
