Carol's Great Granola!
 

10 cups oats
1 cup almond slivers
2 cups of wheat germ
1/2 cup vegetable oil
1/2 cup honey or maple syrup
2 tsp. cinnamon
2 cups coconut
1 tsp. vanilla

Directions
Bake at 275 for 30-45 minutes depending upon how crunchy you like your granola!!

You can also add raisins, other dried fruit, sunflower seeds or flax seed.

Enjoy with milk ... in yogurt ... over ice cream ... or just by the handfuls!

 

 

 
Linda's Hawaiian Chicken Salad with Baby Spinach
 
 

2 c baby spinach leaves
2 c torn romaine lettuce
1 large red bell pepper, thickly sliced
1/2 c canned mandarin orange segments, drained
1/4 c Red Raspberry Vinaigrette with poppyseed Dressing
(Linda uses Good Seasons brand!!)
1/2 lb. grilled, sliced chicken breast
2 Tb Cashews
2 Tb Coconut, toasted

Directions
Toss Spinach, romaine, peppers and oranges in bowl. Add dressing, mix and serve on 2 plates.

Top with the chicken, sprinkle with cashews and coconut.

 

 

 
Sarah's Cheese Artichoke Dip
 

*Recipe from the kitchen of Bev Dowdall

1 can Artichokes, drained
1/2 cup Mayo
1/2 cup parmesan cheese, shredded
1 1/2 cups mozzarella cheese shredded
1/2 tsp. garlic powder

Directions
Dice Artichokes and combine with other ingredients. Spread into a shallow 8² pan. Bake at 350 for 30 minutes.

Serve with crackers or tortilla chips.

Put in pie plate.

For parties double and use 2 quart shallow casserole dish

 

 

 
Melissa's Blueberry Crisp
 

One of our summertime favorites!

6 c blueberries
2 T. brown sugar
1 T. flour
1T. fresh lemon juice
2/3 cup flour
1/2 c. oats (uncooked oatmeal)
3/4 tsp. cinnamon
4 1/2 T. chilled butter cut into small pieces

Directions
Combine 1st 4 ingredients in a medium bowl, spoon into a 11x7 baking dish.

Combine flour, brown sugar, oats and cinnamon and cut into butter.

Sprinkle over blueberry mixture. Bake at 375 degrees for 30 min.

Top with ice cream.
*Note - Food processor - You may place flour, brown sugar, oats and cinnamon in food processor and pulse 2X or till combined.

Add butter, pulse 4X or until resembles coarse meal. (If you have a food processor, it makes it much easier!)

 

 

 
Julie's Hard-Shell Ice Cream Sauce
 

1 C semisweet chocolate chips

1/4 C butter, cubed

3 T evaporated milk

Directions
In a heavy saucepan, combine chocolate chips, butter and milk. Cook and stir over low heat until chips are melted and mixture is smooth. Serve warm over ice cream-sauce will harden. Refrigerate leftovers. This would work with butterscotch chips, too, to make butterscotch dip! It's a great fast and easy summer treat!

 

 

 
Alane's Fumi Salad
 

1 Head Cabbage, Shredded
8 Chopped Green Onions
1 Cup Chopped Celery
8 Tbsp. Sesame Seeds
2 Pkgs. Uncooked Ramen Noodles
8 Tbsp. Toasted Slivered Almonds

Dressing Mix
3 Tbsp. Sugar
1/4 Cup Salad Oil
4 Tbsp. Rice Vinegar
1/2 Tsp. Salt
1/2 Tsp. Pepper

Directions
To toast almonds, spread on cookie sheet in middle of 350 oven, bake for 7 to 10 minutes - stir 2 to 3 times.

Toss shredded cabbage, green onions and celery with dressing mix.

Add almonds and broken up noodles just before serving.
