1 cup butter
2/3 cup sugar
2 tsp vanilla
2 sleeves Club crackers
6 oz. chocolate chips
1 cup chopped nuts
Directions
Line 2 cookie sheets with aluminum foil and
spray liberally with cooking spray. Line the
pan with Club crackers. Put the sugar and the
butter in a saucepan. Bring to a boil over medium
heat, stirring constantly, until light in color
and foamy . Remove from heat, add vanilla and
stir well. Pour mixture over crackers and spread
evenly. Sprinkle with chopped nuts (if desired).
Bake for 10 minutes at 350 degrees, being careful
not to over-bake. Remove from oven and immediately
sprinkle with chocolate chips. Let them melt
and spread evenly over the crackers. Let cool
for 15-20 minutes, peel off the aluminum foil
and break into pieces. Store in a covered container.
They freeze really well. If desired you can
use only one sleeve of crackers for an even
richer treat.
