Carol's Best Broccoli Casserole Ever!!
 

2 pounds fresh broccoli, cut into floerts
1 can condensed cream of mushroom soup
1/2 cup mayonnaise
1/2 cup shredded cheddar cheese
1 tablespoon lemon juice
1 cup crushed cheese-flavored snack crackers

Directions
Place 1 inch of water and broccoli in a saucepan; bring to a boil. Reduce heat; cover and simmer for 5-8 minutes or just until crisp-tender. Drain and place in a greased 2 quart baking dish. In a bowl, combine the soup, mayonnaise, cheese and lemon juice. Pour over broccoli. Sprinkle with crushed crackers. Bake, uncovered, at 350 for 25-30 minutes or until heated through. Enough to serve 6 people.

 

 

 
Linda's Old Fashioned Party Cheese Ball
 
 

8 oz. Cream cheese
3 Tb mayonnaise
3 Tb Sour cream
8 oz. shredded Cheddar cheese (or any shredded cheese)
1 pkg of French Onion soup (or any pkg salad dressing ie. Ranch)
chopped pecans or walnuts
crackers for serving

Directions
Soften cream cheese briefly in microwave for ease of mixing. Add mayonnaise and sour cream. Stir in Dip Mix until well blended. Add shredded cheddar. Chill until well set. Form into shape of ball, then roll in nuts. Cover in clear wrap in refrigerator until ready to serve with crackers. Happy Party!!

 

 

 
Sarah's Buffalo Chicken Wing Soup
 

6 cups of shredded chicken breast (approximately 2 lbs)
10 cups of milk
6 (10-ounce) cans of condensed cream of chicken soup, undiluted or 2 of the large cans
2 cups of sour cream
1/2 to 1 cup of hot pepper sauce (Frankís red hot sauce is the best!!)


Directions
Cook the chicken thoroughly, either by deep frying or a foreman grill works fast. Put the rest of the ingredients in a large pot and use a whisk to break up the clumps until it is smooth. Heat the mixture, stirring often. Shred and add the chicken. Continue heating and stirring till the mixture comes to a slow boil.

 

 

 
Melissa's Asian Beef & Noodles
 

1 1/4# ground beef
2 packages (3oz.) Oriental flavor instant Raemen noodles
2 cups frozen mixed vegetables
1/4 tsp. ground ginger
2 Tblspn. thinly sliced green onions

Directions
1. In large skillet, brown beef over medium heat 10 - 12 min until cooked, breaking up into 3/4" pieces. Drain well. Season beef with one seasoning packet from noodles. Set beef aside.
2. In same skillet, combine 2 cups water, vegetables, noodles (broken up), ginger and remaining seasoning packet. Bring to a boil; reduce heat. Cover, simmer 3 min. or until noodles are tender, stirring occasionally. Return beef to skillet, stir in onion. Makes 4 servings.

 

 

 
Julie's Crispy Blue Cheese Potatoes
 

1 lb. red potatoes, cut into wedges
1 T olive oil
1/8 t salt
1/8 t black pepper
1/4 C blue cheese crumbles
8 0z. bacon, crisply cooked and chopped
1/2 C shredded cheddar cheese

Directions
Toss potato wedges with olive oil. Season with salt and pepper. Place in baking dish. Bake at 400 for about 30 minutes or until tender. Mix blue cheese, bacon and cheddar cheese; sprinkle over potatoes. Bake until cheeses are melted, about 5 minutes. Makes 4-6 servings. Okay, okay, this probably doesn't gel with most of your New Year's resolutions ... but these potatoes are to die for!!! Try them on a day you're splurging!!!!!!
